To achieve this classic profile with smoky notes, you'll typically use an 80/82 pts. cup of coffee. There's a type of roast called "Tasting." This roast is considered light and allows the cupper to taste the true flavor of the coffee, giving it a score based on the quality of its attributes. For Medium Roast, we only use TOP beans, giving it a little more development during roasting to highlight the best attributes we experience in Tasting; this is known as Profiling.
